Breakfast! They say it’s the most important meal of the day. It’s actually when I do my most frequent dining. Palm Desert has no shortage of breakfast options, but few dishes capture my imagination the way this one does.
While I do enjoy a classic American breakfast (see yesterday’s post on Keedy’s), I generally approach breakfast like every other meal: I want something new, something interesting, something that breaks the norm and captures my imagination. And dinner‑for‑breakfast dishes have always been one of my indulgences. In that regard, the Breakfast Jambalaya at Breakfast Republic has been my go‑to for the past couple of years. Any morning visit to Palm Desert is a good excuse to drop in at Breakfast Republic.
A Palm Desert Outpost with a Southern California Personality
Breakfast Republic opened its Palm Desert location in 2023, bringing its Southern California brunch personality to the Coachella Valley. Originating in San Diego in 2015, the concept has been expanding — but currently still remains heavily centralized around SD County. They’re known for oversized portions, playful/cheeky décor, and an imaginative menu. And it’s the latter point where Breakfast Republic merits inclusion on PalmSpringsBites.com. They may be corporate, but they’re chef‑driven, ingredient‑driven, and surprisingly creative. They make breakfast fun too with their egg décor and countless egg puns. Even the host stand has a sign that says “Walken’s Welcome” with a photo of the eponymous actor.
A Menu Built for Breakfast Adventurers
The menu at Breakfast Republic ticks many boxes for me. Shrimp & Grits (with eggs), Chilaquiles, Bacon & Egg Mac, Shrimp & Crab Cake Benedict are just some of the eye‑catching dishes. There are over a dozen interesting pancake and waffle selections. So why wouldn’t you take their offer to mix and match and do a flight? And they use top ingredients like Vital Farms pasture‑raised eggs: “… the ones you’ll find … for $8–10/dozen,” as stated on the menu. And they’ve got a decent selection of vegan items.
I’ve enjoyed a few of their dishes, but it’s the Breakfast Jambalaya that keeps me coming back — and the Jurassic Pork.
The Dish That Keeps Me Coming Back: Breakfast Jambalaya
The dish arrives on a Breakfast Republic‑branded plate that promises a “Cluckin’ Good Breakfast.” It’s a claim that’s as bold as the flavors in the dish, and it doesn’t disappoint. It’s a traditional jambalaya at heart — a colorful bowl of Creole‑inspired comfort. Seasoned rice, fire‑roasted tomatoes, thinly sliced bell peppers, paprika, and green onions form the base while Portuguese linguisa sausage and plump shrimp add substance. Linguisa is a bit of a diversion from traditional andouille, adding some sweet smoky savor, while the shrimp is plump and freshly cooked. The color of the shrimp proves they cook to order, and maybe I’d make a minor adjustment here and tell them to char it for me. But it does appear fresh and succulent.
And in a true breakfast twist, it’s topped with three eggs — my choice over‑easy. It looks great for presentation, but I immediately smash the yolks, chop up the egg, and toss it into the savory base. Mixing the eggs in turns the dish into something richer and more cohesive — almost like a breakfast fried rice.
This is exactly the kind of dish I look for. It was the first dish I ever ordered at Breakfast Republic over two years ago, for good reason. If it seems quirky, unusual, bold, outside‑the‑box, I’m sold. Even more so if it seems like it shouldn’t work. But with a breakfast jambalaya, every part of this dish just makes sense. It works in concept and in execution.
Jurassic Pork: A Show‑Stealing Side
The jambalaya dish is more than enough to fill you up, but I still can’t help adding a side of Jurassic Pork. It’s their thick‑cut marinated bacon glazed with brown sugar and paprika. It’s a hearty side too, almost slab‑style. It’s perfectly cooked, soft without appearing underdone. In fact, the sweet glaze browns it to perfection. That sweet‑smoky and lightly spiced combination is a perfect complement to the jambalaya. It’s the kind of side that makes you wonder why bacon isn’t treated with this level of respect everywhere (unless, of course, we’re talking about Cheeky’s and their bacon flight).
One of Palm Desert’s Best Breakfast Spots
Breakfast Republic ranks high among places to enjoy breakfast in Palm Desert, and it’s become a reliable stop for locals and visitors exploring Greater Palm Springs. I’ll give you my full list as I flesh out the blog. And the Breakfast Jambalaya might well be my favorite breakfast dish in Palm Desert — it’s certainly the one I order most often.
